sweet potato, coconut & chilli soup

At this time of year I become a bit of a soupaholic. My new favourite is sweet potato, coconut & chilli soup. This is based on a Jamie Oliver recipe and is perfect for warming you up on a cold winter’s day. It is also super easy to make.


  • Large onion
  • 1kg Sweet potato
  • 4cm Ginger
  • 3 Green Cardamom pods
  • 2 Cloves of Garlic
  • 2 tbsp of Groundnut oil
  • 400 ml low fat coconut milk
  • 800ml chicken stock (can use veg stock instead)
  • 1/2 tsp of chilli powder to taste


Peel and chop the onion and add to a saucepan with the groundnut oil to soften it.

Whilst the onions are softening remove the cardamom seeds from the pods and crush them, a pestle and mortar is good for this. Peel and chop the sweet potatoes.

To the softened onions add the  sweet potatoes and crushed cardamom seeds. Crush the garlic into the pan and finely grate the ginger. Mix and heat the ingredients for 2-3 minutes.

Add the low fat coconut milk to the pan and cook for a further 2-3 minutes.

Next add the stock and the chilli (to taste) to the pan. Cover and simmer for 20 minutes.

When cooked use a hand blender to blend the soup.

This is such an easy soup to make and is so tasty. I love the combination of flavours and the ginger is great to ward off the dreaded cold in the winter months.
